Pineapple upside down cake

A delicious recipe you can easily cook at home, giving insight into the restaurant-quality food from Aurum Catering's menu.

Ingredients

  • 160g self-raising flour
  • 210g butter
  • 200ml golden syrup
  • 1 tbsp vanilla essence
  • 4 eggs
  • 210g sugar
  • 135g pineapple rings
  • vanilla ice cream to serve

 

Method

  1. Preheat the oven to 150°C.
  2. Using an electric mixer, combine butter and sugar in a bowl until smooth and creamy.
  3. Add vanilla essence, eggs and self-raising flour and mix until just combined.
  4. While the batter is mixing, take a 24cm baking dish and ensure it is greased and lined with baking paper. Arrange the pineapple rings onto the base of the dish to completely cover the bottom. Cover the pineapple with a thin layer of golden syrup.
  5. Pour the cake batter over the pineapple rings and bake for 30 minutes or until completely cooked.
  6. Allow the cake to cool.
  7. Once cooled, turn the cake upside down (be careful not to do this too high up) and serve with vanilla ice cream.
