Sweet potato and caramelised onion quiche

Make it for dinner tonight, or pop it in the freezer for a night when you need a break from cooking!


  • 2 sheets puff pastry
  • 160ml cream
  • 5 eggs
  • 500g sweet potato (diced)
  • 150g parmesan
  • 1 tbsp olive oil
  • 1/2 cup spring onion (sliced)
  • 1 onion (sliced)
  • 150g grated cheese
  • Salt and pepper



  1. Preheat the oven to 180°C.
  2. Place the sweet potato and onion into an ovenproof dish and roast until tender. Once tender, set aside in a bowl and allow to cool.
  3. In a mixing bowl, combine eggs, cream, spring onion, salt and pepper and mix thoroughly.
  4. Add grated cheese and parmesan to the sweet potato and onion, then mix.
  5. Grease a 25cm round dish with oil and line with puff pastry.
  6. Add the sweet potato mixture, then pour the egg and cream mixture over.
  7. Bake for 40 minutes or until the egg is fully set.
