Ingredients
- 2 sheets puff pastry
- 160ml cream
- 5 eggs
- 500g sweet potato (diced)
- 150g parmesan
- 1 tbsp olive oil
- 1/2 cup spring onion (sliced)
- 1 onion (sliced)
- 150g grated cheese
- Salt and pepper
Method
- Preheat the oven to 180°C.
- Place the sweet potato and onion into an ovenproof dish and roast until tender. Once tender, set aside in a bowl and allow to cool.
- In a mixing bowl, combine eggs, cream, spring onion, salt and pepper and mix thoroughly.
- Add grated cheese and parmesan to the sweet potato and onion, then mix.
- Grease a 25cm round dish with oil and line with puff pastry.
- Add the sweet potato mixture, then pour the egg and cream mixture over.
- Bake for 40 minutes or until the egg is fully set.
